2/17/04 Cards w/Rich, Mike, LiCalsi @ Brian's; Rich makes Sweet Ricotta Crema:
I forgot to take photos of cards at Brian's this evening so I got everyone together for a posed photo, which is unusual for my collection. Rich, Mike, LiCalsi, and Brian.
Later in the evening, Rich came up with the idea to try dessert, now that he's conquered the other courses of a meal.
The Almonds.
They get crushed and toasted with wine. Then he adds cream, sugar, and put the whole thing in a double boiler with the ricotta cheese, and reduce to "a sec" (French for 'until the liquid's almost gone') slowly.
Which is exactly what is occurring above.
The final presentation, in little ceramic cups and saucers that Rich recently bought as custard cups, but were perfect for this use as well. It was delicious!!!!
